Applies to: Theoritically All OSx86 (tested only on VMWare)

Edit the file /Library/Preferences/SystemConfiguration/com.apple.Boot.plist and add :

<key>Graphics Mode</key> <string>1280x1024x32</string>

You could test other resolution strings, but this one works. For a list of modes your card supports, type "?video" at the boot prompt (minus the quotes, obviously). You should get a list of all resolutions/colour depths/refresh rates your card currently supports under OS X."
