I've got a pretty simple way to restore the checkpoints after they get lost.
1)if you play till a certain point(checkpoint) and want to stop playing, quit and go to the following path:
C:\Documents and Settings\(User id)\Local Settings\Application Data\Microsoft\XLive\Content\E00000A044507EA1\FFFE 07D1\00010000\E00000A044507EA1_MountPt\
2)Make a backup of the file 4D530842.gpd. this filewill have been modified at the time of ur last save.
3)Make a backup of this file everytime you stop playing.
4)If you find that ur saves are lost, copy the most recent 4D530842.gpd from your backup back into the path shown above overwriting the 4D530842.gpd that is there, and your saves will all return.
atleast, thats what works for me.
PS: keep the internet off while you're playing or Microsoft Live will screw around with your offline profile
