Deliberate "mistake": The hook handed man's voice changes between the two times he is playing the piano in the Poison Apple, due to the two different singers used to voice him.
Continuity: When Shrek enters the castle via the drawbridge, he enters on the right side (if viewed from outside the castle)and grabs the chain for the drawbridge. When he slides down the chain inside the gatehouse, he is on the opposite side of the entryway.
When Puss In Boots flicks the Gingerbread Man to Pinocchio he is on the back of Donkey. But when Shrek jumps on the back of Donkey he is not there, then Puss In Boots suddenly jumps down to fight the guards.
Although the second movie takes place not long after the first, Shrek has grown a startling amount of chest hair. In the opening sequence of the first movie, Shrek is rather hairless as he bathes. However, in the castle in Far Far Away, he walks around shirtless, but definitely not hairless.
Shortly after Fiona's dog is introduced, he is seen on the sofa while Shrek and Fiona are talking. The dog yips throughout the scene, but early on he yips twice and only opens his mouth once. Dogs must move their jaws when they bark, otherwise it sounds like a whine instead.
